SALADE a la Chinoise

Recipe for Two. Goes beautifully with grilled chicken or shrimp.

SALAD INGREDIENTS:

Mixed greens, well washed and spun, 1 med bowl full

A cup of unsalted, organic, raw cashew nuts

1 tin, sliced water chesnuts

Organic carrrot, 1 c shredded

Organic Shallot, I c chopped

Organic Green onion, 1 c chopped

Organic celery, 1 c chopped

DRESSING INGREDIENTS:

1/4 c celery chopped

1/3 c carrot peeled and chopped

1/4 c fresh ginger root, chopped

2 tsp fresh lemon juice

1 tsp gourmet ketchup

3 tbsp  beet sugar

1 tbls Celtic salt

1/4 tsp Organic pepper

1/4 avocado oil

1/3 C rice vinegar

1 tbls amino acids

3 tbls spoons filtered water

DIRECTIONS:

  1. Mix the dressing ingredients in a food processor until well blended.

  2. Add to greens and mix well, saving the cashews and chopped green onion to sprinkle on top before plating and serving.
